Is homemade pasta strictly Sunday lunchtime for you too? This tradition is a must for Calabrian families. When I was a child we used to get together with our grandparents, who often made gnocchi, one of the first that I loved most. The most classic sauce was kid's, very typical of our area, but I'm an experimenter.

For my Sunday lunch I tried something more daring: a citrus honey sauce with a sprinkling of cinnamon.

Gnocchi and honey are divinely married and cinnamon adds that extra touch that conquers everyone at the first taste, I assure you.

The choice of ingredients is fundamental, because they are delicate flavors and no element must prevail over the others.


Ingredients for 4 people

For the gnocchi :

  • Potatoes 1 kg

  • "00" flour 350 g

  • Salt up to 15 g

For the sauce :

  • Citrus honey 100 g

  • Butter 80 g

  • Parmesan to taste

  • Breadcrumbs to taste

  • Cinnamon powder 1 pinch


Preparation

To prepare the gnocchi , boil the peeled potatoes in a large saucepan for about 40 minutes. To be sure they are ready, do the "fork test": prick the potatoes in the center and if the prongs sink effortlessly the time has come to remove them from the heat.

Drain the water and mash the still hot potatoes with a potato masher or a spoon, until they become a homogeneous paste. At this point, place them on a pastry board and mix them with flour and salt, until obtaining a soft but compact mixture. The mixture thus obtained must be divided into three pieces to be rolled with the palms of the hands wide open until they become three loaves 3 cm thick each. Cut the three loaves into 3 cm regular cubes and pass them on a row of gnocchi or with the prongs of a fork, pressing lightly so as to give everyone the typical cavata shape.

The gnocchi are ready and you can move on to preparing the sauce. Mix in a bowl Parmesan, breadcrumbs and cinnamon. Separately, melt the butter and honey over low heat.

Bring plenty of salted water to the boil and gently pour the gnocchi. As soon as they rise to the surface, recover them with a slotted spoon taking care not to break them.

Serve them with the mixture of Parmesan and breadcrumbs and, lastly, add the butter and honey sauce. Your first course is ready!
